Hey friends,
Today I am going to share with you the recipe of pulao made in shahi style... I would like to call it shahi pulao.
Let's begin:
- Basmati rice
- Oil/ Desi ghee
- Jeera/ Cumin seeds
- Tej patta/ Bay leaf
- Laung/ Cloves
- Chhoti elaichi/ Green cardamom
- Kishmish/ Raisins
- Kaaju/ Cashew nuts
- Haldi/ Turmeric powder (optional)
- Salt (as per taste)
Method:
The first step begins with washing the rice properly. Then soak the rice for 15 minutes.
Meanwhile, heat one tablespoon oil/ ghee in a pressure cooker. After the oil is heated add jeera, tej patta, laung and elaichi to it and fry for 30 seconds. Then add kaaju and kishmish and cook for one more minute. When the nuts start giving nice aroma, add the rice after draining water. Cook for 2 minutes continuously mixing it and then put some salt and turmeric powder in it. Turmeric powder is totally optional and you can avoid it if you want. Finally add water (twice the amount of rice)
When the water starts boiling close the lid of the cooker and pressure cook the rice for 2 whistles. Remove the cooker from flame and open the lid when the whistling stops.
I promise that the whole kitchen will be filled with mouth watering aroma of the spices while cooking and it will increase you appetite for sure.
Finally, serve this delicious shahi pulao with some curry like shahi paneer and raita.
